This nigori-zake is a cloudy version of our junmai-shu, the product that best expresses our origins and the very foundation of our brewery since its establishment. Junmai-shu is sake brewed with only rice and water. We spend more than 50 hours making the koji, on par with daiginjo, as this step has the greatest impact on the resulting sake flavor. Koji infused with rich flavor allows us to make more deeply-flavored and mellow nigori-zake. Delicious chilled or warmed.
